Strawberry Jam with Gelatin

Strawberry Jam Ingredients
- 30 oz or about 900 g fresh and sweet strawberries
- 4-5 oz gelatin
- 17 oz white sugar
- 0.3 cup water
- 0.3 oz citric acid
- Remove the green stalks from the berries. Sort the strawberries and rinse well under the cold and running water. Then leave the strawberries on paper towels for 15-20 minutes. Remember, that strawberries must be completely dry before cooking.
- Next, transfer the strawberries to a saucepan, sprinkle them evenly with sugar. Bring the strawberries to a boil and cook them over low heat for 20 minutes. During this time, strawberries should give juice in which sugar will dissolve.
- Do not forget to remove the foam from the jam. Transfer the strawberry foam into the stainless steel and heat-resistant bowl. Later you can enjoy sweet strawberry foam.
- Don’t remove the saucepan from the stove. Grind the strawberries to a purée. Use an immersion blender. Bring to a boil.
- Spoon some citric acid into the strawberry mass and cook over medium heat for 15 minutes. The amount of sugar and citric acid depends on the sweetness of your strawberries.
- Combine the gelatin with some water in the bowl and mix well. The gelatin must be melted, a water bath could help.
- If you are using an alternative thickener, follow the manufacturer's recommendations on the packaging.
- Combine strawberry purée and gelatin. Stir, but do not bring to a boil again, otherwise, the gelatin may not work, as it will lose its characteristics.
- Ladle the still-hot strawberry jam into the prepared and sterilized jars and seal the jars.
- The strawberry jam can be served as a dessert for tea or used as a filling for various pastries and cookies.
